Happy Tuesday!
If you know me personally, you would know I am very much a creature of habit. Especially when it comes to food. Once I find something I love that is easy, tastes good, and affordable, I’m sold for the next year. When you are balling on a budget, this can really come in handy!
So, without further a do, here are two of my favorite, go-to bowl recipes as of late. WOOHOO!
Air Fried Salmon and Rice Bowls
I am VERY passionate about salmon and I think I have nailed down the perfect technique. So let’s start here first!
Salmon Ingredients:
1 Salmon Fillet (I love the blue package frozen salmon fillets at target! I just thaw them in a bowl of room temp. water for about 30 minutes prior)
Balsamic Glaze
Honey
Salt
Pepper
Garlic Powder
Salmon Instructions:
First, pat your salmon dry before you begin. Add about teaspoon of balsamic glaze & a teaspoon of honey and spread it over the entire filet. Then, add your salt, pepper, and onion powder on top, covering the filet. I am a big believer in eye-balling measurements when it comes to seasoning, so I apologize for the lack of precision!
Next, line your airfryer pan with tinfoil or a reusable airfryer liner and add some cooking spray or olive oil to prevent sticking. Place your filet in the pan (do not remove the scales until after) and press the Airfry botton. Set your temperature to 390 and airfry for 8-10 minutes (this will depend on how cooked/crispy you like it).
And that’s it! Super simple but so so good.

Bowl Ingredients:
Airfried Salmon
Jasmine Rice
Shredded Brussels Sprouts ( I get mine at Trader Joes or Target)
Edamame (I like the microwavable package from Trader Joes)
Honey
Balsamic Glaze
Olive Oil
Salt
Pepper
Garlic Powder
Avocado
Sesame seeds
Shredded Carrots
Bowl Instructions:
Begin cooking rice (I usually do about 1 cup of rice) using instructions on the bag. Then, to cook the brussels, add about a tablespoon to a pan and begin sautéing them at medium heat. Then add balsamic glaze, honey, salt, pepper, and garlic powder as you cook (again, the amount is based off of your preferences). Cook until crispy!
Add your rice to a bowl along with your salmon filet and brussel sprouts. Then, add a half of a sliced avocado and about half a cup of your cooked edamame (according to instructions on the bag). Lastly, garnish with some shredded carrots and sesame seeds. And ENJOY!
Southwest Taco Bowl
Ingredients:
Ground Beef or Chicken
Lettuce of choice (I like romaine or Iceberg)
Corn
Black Beans
Cucumber
Tomatoes
Chick Peas
Bell Peppers
Avocado
Tortilla Strips
Shredded Cheese
Lemon or lemon juice
Olive Oil
Salt
Pepper
Bowl Instructions:
Simply start by cooking the ground beef or chicken over the stove. Then, chop all of your produce as well as drain/rinse the canned vegetables. Add your lettuce to a bowl and begin adding your meet and toppings. For a dressing, you can combine olive oil, lemon juice, salt, and pepper to a jar and shake it up– then add it on top!
This is a very simple recipe, but such a good one. You can get a lot of nutrition and a good bit of left overs from this one meal! With this bowl, you get to play around with the ingredients that you prefer and add as much or little as you want. I personally love lots of lettuce, bell peppers, black beans, avocado, and cheese, so I add more of those than the other ingredients. The other bonus with having so many leftovers from this one meal is that you can do so much with these specific ingredients outside of this recipe– you can make omelets, salads, soups, side dishes, etc.!
I hope you enjoy these easy and yummy bowl recipes!
